Our Recipe of the Week - Chicken Curry

We know just how hard it is to maintain variety, nutrition and general enjoyment of meals for kids daily, so we are happy to share our favourite kid friendly meal ideas each week with you!
Ingredients
½ tbspn Olive Oil | 1 cup green beans |
1 medium carrot | 1 medium zucchini chopped |
1 celery stick | 400g chicken thigh fillets |
1 small brown onion | 120g pineapple (diced can) |
1 x 800g can diced tomatoes | ¼ cup natural yoghurt |
1 cup pumpkin | 1 cup of uncooked long grain rice |
1 tsp curry powder |
This recipe serves six.
Method
Cook rice according to packet instructions. Set aside
Preheat oven to 180 degrees Celsius
Peel and chop onion. Wash and slice carrots and celery.
Heat oil in large fry pan over medium heat.
Add onion, sliced carrots and celery. Gently cook for 5 minutes.
Peel and chop pumpkin. Chop zucchini and beans into small pieces. Add to pan and stir for 1 to 2 minutes.
Add chicken and canned diced tomatoes to the pan. Bring to the boil, then reduce heat and simmer for 1 hour.
Serve with rice, chopped pineapple and natural yoghurt.
